This is a dessert I prepared for my family a few weeks ago. It's very easy. I used wine glasses. Basically, you layer it like you would a banana pudding. There's only a few ingredients. You don't have to use chocolate chip cookies. You can use whichever cookie you like. Easy Chocolate Chip Cookie Cheesecake Parfaits Prep Time: 2 to 4 hrs - Makes/Yield: 4 ![]() Ingredients • 12 chocolate chip cookies • 6 ounces cream cheese, softened • 4 ounces mascarpone cheese, softened • 2 teaspoons vanilla extract • 1/3 cup sweetened condensed milk • whipped cream for topping Steps 1. In the bowl of your electric mixer, add the cream cheese and mascarpone. Beat on medium speed until the cheeses are mixed and slightly creamy, then drizzle in the condensed milk with the mixer still going. Add in the vanilla extract and beat the mixture until it is creamy and smooth, scraping down the sides if needed. 2. Take 10 of the chocolate chip cookies and either add them to a food processor or place them in a resealable plastic bag. Pulse (or crush) the cookies into small pieces. You don't want them to be as fine as graham cracker crumbs - but you still want them crumbly. Having some larger pieces in there is okay too. Take a few spoonfuls of the crushed cookies and stir them into the cheesecake mixture. I'd say about 1/4-1/3 cup. 3. Take 4 (6-ounce) jars and add a tablespoon of two of cookie crumbles to create a "crust." They aren't going to be as solid as graham crusts, but just layer them in there. There is no rhyme or reason to how I layered the parfaits - I simply added some cheesecake layer on top of the bottom crust, did another layer of cookies, another layer of cheesecake, then one more layer of cookies. Place in the fridge for 2 to 4 hours - just until the cheesecake sets. Remove the jars from the fridge and top them with a little whipped cream and extra cookie crumbs. Break apart the remaining cookies and stick the pieces in the whipped cream. Serve! 4. These actually stay fresh in the fridge for a few days - cover them in plastic wrap and skip the whipped cream until right before serving. The cookies get slightly soft, but they still taste delicious. |

I'll enjoy a parfait! My next cooking class is a baked ham, in time for Easter. My husband won't eat ham. My sisters will eat it, I'm confident. Before I go to class next week, does anyone have any hints on making a succulent tasty ham? This last week we learned to make homemade yeast rolls. Oh hell no! Yeast and me are not friends. My dough never proofed and it was a disaster! There is a reason I can buy already made heat & eat dinner rolls!! |

:-) If I was a genius I could cook! It's a shame I'm not good at it. I will post the yeast roll recipe tomorrow, even though it did nada for me. Maybe someone will find it worth their energy and time. |

I want to do a shout out to the "bread maker" and thank you for the tips and recipe. :-) My rolls turned out great and I was in the Victory Groove Spirit when my husband and his family gobbled them up and begged for more! Recipe will follow as soon as I have permission to publicly make her family traditional roll recipe made known. Let's get our Groove on, girl! :-) |

The Best Part of Waking Up? Cafe Mocha 1 cup strong brewed coffee 1 Tablespoon unsweetened cocoa powder 1 Tablespoon plain white sugar 2 Tablespoons milk Mix well and enjoy! Here is the yeast roll recipe from my cooking class I flopped. Butter Horn Rolls 1 pkg of yeast (it's one of the square small packages, I can't recollect how many oz's but I'll find out if anyone requires it) 1 cup + 3 Tablespoons of warm water 1/2 cup white sugar 1 tsp salt 1/2 cup melted real butter 2 eggs, beaten well 4 cups flour Let me say this, I have no experience with yeast. I didn't realize the temperature of the water, the humidity in the air, the personality of those yeast boogers, etc...could change the outcome of my rolls. I didn't even know or realize that yeast, was alive! I have no business being in a kitchen! Dissolve yeast in 3 TBSP of warm water. Wait for it to "sizzle" (a trick from my Bread Maker Friend) or proof. If it doesn't proof throw it out and try it again. It's better to toss 3 tablespoons of water and a pkg of yeast vs a whole bowl full of worthless dough. In a large mixing bowl mix sugar, 1 cup water, melted butter, salt & eggs together. Stir in the flour & yeast. Mix until just combined. Cover and refrigerate overnight. On a lightly floured surface, divide the dough in half. Roll the 1/2 of dough into a 12 inch circle, cut the circle into 12 wedges. Roll each triangle into a croissant style from the widest to the point. Place on a cookie sheet covered in parchment paper. (Thank you Bread Maker Friend!) and let rolls rise double in size in a non drafty warm area. (Stupid yeast are so particular) Bake at 350 degree oven about 15-17 mins until light brown. May top with melted butter if you prefer, while still hot from the oven. Repeat with 2nd half of dough. These rolls are tender and very delicious! Enjoy! Edited by Plus 1, Apr 13 2014, 12:22 PM.
