I decided to place this in Entertainment because my cooking is entertaining, after all. Although I can make the basics I've decided to step it up a notch and improve my skills. In fact, a fellow poster here on AFN, inspired me. I'm going to share what I learned to make in my cooking class. I hope you all will critique and share your own cooking stories and recipes. |

My first classes were "Irish" and "St. Patrick's Day" themed, which I was not impressed with. I almost quit going but decided to continue, how bad could it be? First Dish: Corned Beef / Cabbage Casserole. I didn't keep the recipe, it was so bad I didn't eat it. Neither, did my husband. Second Dish: Colecannon. This is a potato and kale dish that Irish people are supposed to eat. It tasted ok, but the preparation was too tedious for my style. I didn't keep the recipe. Now the themes are moving along to spring and Easter. Third Class Dish: Spring Jello. This is a lime jello recipe with crushed pineapple, shredded carrots, and mayonnaise mixed into it. It looked disgusting, murky and like someone jellied their vomit. I did not even taste it. Nor did I keep the recipe. Fourth Class Dish: Roasted Spring Chicken. This was worth waiting for! I'd enjoy seeing his recipes! No, I promise you, I certainly don't cook better than anyone! My poor husband, eats from a can far more than any man should. |

I should post my baked chicken recipes here. Somehow, I lost the ability to make a meat loaf that won't fall apart. Great thread, Plus 1. |

LOL! My boo is a great cook! Me, not so much, but I could survive off of my cooking if I had too! I'm learning and she has taught me some things! My mom was a stickler about us not depending on anyone! Since my boo and I both work, I gladly share the chores like the laundry, dusting, vacuuming, ironing when needed ( I put most of my clothes in the cleaners). She likes things neat and like some males, I don't always get it right! It would be great to become a very good cook though!

Roasted Spring Chicken 3lb whole chicken 2tsp salt 1 tsp paprika 3/4 tsp cayenne pepper 3/4 tsp cumin 3/4 tsp tumeric 1/2 tsp onion powder 1/2 tsp thyme 1/4 tsp white pepper 1/4 tsp garlic powder 1/4 tsp black pepper 1 large chopped onion or sweet apple Rince & dry chicken Mix spices together and rub all over and inside of chicken Let it "merry" overnight in the refrigerator Stuff the inside of cavity with chopped onion Put in roasting pan breast side down Roast at 250 degrees for 5 hours or until meat reaches 180 degrees Carve & enjoy |
