After a lot of trial and error, I have managed to get , what I think is the closest thing to KFC. I tried frying chicken pieces, coated in seasoned flour but they kept turning out like the batter you get on fish from the chip shop. So after a lot of thinking I thought I would try baking the chicken with the same seasoning in the oven. After two or three attempts I was happy with the end result. I know KFC call it fried chicken but has anyone ever actually seen them fry it. Has anyone on here ever worked in a KFC? I personally don't think it's fried. I might be wrong. So here's the way I do it. You need: 9oz self raising flour 1 level tablespoon salt 3 heaped spoons of schwartz special blend for chicken seasoning 2 level teaspoons of paprika 6 eggs quarter of a cup of milk 5 small chicken drumsticks 5 small chicken thighs 6 1 small cup of vegetable oil 1. Sieve flour, salt, paprika and chicken seasoning into a bowl. After you have sieved all the ingredients, there will be some dried herbs left in the bottom of the sieve, just force them through. 2. In a separate bowl beat 6 eggs with a quarter cup of milk. 3. So you don't end up with a mess, just do two pieces at a time. Coat two pieces of chicken in the seasoned flour. Shake off excess flour, then dip into the egg. Hold the chicken up so excess egg drips off. Then into the seasoned flour one more time and then onto an oven tray with a lightly greased rack. 4. Pre-heat oven to 150 degrees and then place the chicken in the middle shelf of the oven and cook for 20 minutes. Heat up 1 small cup of vegetable oil until almost hot. Take the chicken out of the oven and with a tablespoon coat each individual piece of chicken with a spoonful of oil.Return the chicken to the middle shelf and cook for a further 15 minutes or until cooked and golden brown. Take out of the oven and season with salt. You should be able to make this quite cheaply, if you buy the packs of drumsticks and thighs from your butchers. KFC eat s**t and die. PS. Before anyone asks I don't deliver. |

I like that I think I'll give that a go. Now let me go and find those drum sticks I bought from the halal meat market (no butchers in the area any more - all forced out of business by cheap and cheerless, and totally uncomprehending of meat and it's uses - meat markets). And BTW don't buy Schwartz - they have a herb/spice called Kaffir Lime. I've seen it, shown it to the wife so I know it exists. I don't agree with Schartz using that term at all! |

Go on give it a go. You might not get it right on the first attempt but persevere. You only roughly save yourself about three pound but that's three pound in your pocket and not KFC's. |

Stick to the oven mate. It won't work on a BBQ. |
