I'll put it back on track...
Well first off what was said earlier is true... except for the beer bunnies, going to try that hypothesis out tonight.

Next I'd like to say that, the Catholic church is actually quite famous for covering up pagan religion's holidays with their own... Christmas is the Germanic tribes' Hoth, and Easter happen to be the German harvest festival. As for the actual bunny, that happens to be the symbol of the Germanic god of the harvest, Ēostre... as for the whole egg laying rabbit, well legend has it that Ēostre saw a swan/ stork with frozen wings, she saved it by turning it into a rabbit and since it was originally a bird it retained the ability to lay eggs.
