Ingredients
2 large Snapper fillets (@ 10 oz each) skin on one side
1 can (12oz) Diced Tomatoes (Garlic and Mushroom)
1 small can sliced black olives
2 lemons sliced thin
2 pt salt
2 pt garlic salt
1 pt paparika
1 pt Italian Seasoning
1 pt dried thyme
1 pt pepper
Fresh Basil
Parmesian Cheese (sugg. fresh grated Reggiano)

Directions
Preheat the oven to 400 degrees F Cover a pan with foil and spray with olive oil Pam (or spread olive oil) Mix dry seasonings together and season both halves of the fillets. Arrange the fish on the baking sheet, skin up, followed by the stewed tomatoes, the olives, and then the lemon slices. Drizzle 1 tablespoon of olive oil over each fillet. Bake for 15 to 20 minutes, or until the snapper is cooked through. Serve with shredded Parmesian on top.

Cook's Notes:”totally bastardized from Emril's 'Oven Roasted Red Snapper Fillets with Tomatoes and Onions'”

I did this last night. Jen really liked it and told me to write down what I actually did (it was vaguely pulled from that other recipe, but was much simpler)
