2 recipes for butternut squash soup

Butternut Squash Soup

4 cups cubed butternut squash

Chicken stock -enough to cover squash when boiling (can use vegetable stock)

2 cloves garlic (minced)

2 slices of onion (finely chopped)

Couple of dashes of hot sauce

Herb or spice mixture (I use regular or Italian Mrs Dash)

Bit of butter

In large sauce pan, melt butter with garlic and onion, heat until onion is translucent. Add stock, squash and spices. Bring to boil then simmer at medium until squash is fully cooked. Once squash if fully cooked then puree. I use a Braun hand mixer but can be done in batches in a blender. If doing in blender return to pot and simmer on low until ready to serve. We like this soup without any lumps so puree it until completely liquefied. If need be add water or more broth to get a soup consistency.

Roasted Butternut squash and Red Pepper Soup

4 cups cubed butternut squash

Chicken stock -enough to cover squash when boiling (can use vegetable stock)

1 red bell pepper (remove seeds and slice into strips)

2 cloves garlic (minced)

2 slices of onion (finely chopped)

Couple of dashes of hot sauce

Herb or spice mixture (I use regular or Italian Mrs Dash)

Bit of butter

Cube squash and slice pepper, place on baking sheet in oven to roast. Roast the squash first then add the pepper when squash is almost cooked to a parr consistency. Roast peppers until a little black appears on the skin. Remove the skin and blackened part from the pepper before putting in the stock. In large sauce pan, melt butter with garlic and onion, heat until onion is translucent. Add stock, squash, pepper and spices. Bring to boil then simmer at medium until squash is fully cooked. Once squash if fully cooked then puree. I use a Braun hand mixer but can be done in batches in a blender. If doing in blender return to pot and simmer on low until ready to serve. well, i like zucchini, but i've never tried this sort of squash. i'll add it to my shopping list!

Never tried Butternut Squash? They're really good. I like the first recipe, I might have to try that on a cold day this winter (relatively cold... I do live in Houston and all)
