INGREDIENTS

* 1/4 cup butter
* 6 tablespoons carob powder
* 1 cup white sugar
* 1/4 teaspoon salt
* 1/2 cup all-purpose flour
* 2 teaspoons vanilla extract
* 2 egg white
* 50 Crickets

Preparing Crickets for cooking:

Buy large crickets from pet store. Place bagged crickets in freezer for several hours until dead. Remove crickets from freezer and dump crickets in a colander and rinse well. Place rinsed crickets on a cookie sheet lined with 3 or 4 sheets of paper toweling. Bake crickets for 1 1/2 to 2 hours in a 200 degree oven. Remove from oven and let cool. To remove legs and antennae from crickets, roll your hand over crickets.
DIRECTIONS

1. Preheat oven to 300 degrees F (175 degrees C). Grease an 8-inch square baking pan.
2. Melt the butter or margarine over low heat. Pour into large mixing bowl and stir in carob powder, sugar, salt, flour, and vanilla. Mix in egg whites and crickets. Spread the dough evenly into the baking pan.
3. Bake for 30 minutes. Let cool in pan for 10-15 minutes before cutting.







(the squeamish may substitute 1 cup of chopped walnuts for the crickets)
