Believe it or not, I'm actually a decent cook! I thought I'd share the occasional recipe. Try them out, let me know what you think. And add your own recipes too!

Chocolate Chip Peacan Pie

You will need:
1 9 inch pie shell
2 large eggs
1/2 cup flour
1 cup sugar
1 tablespoon vanilla
1/2 cup melted butter
1 cup chopped peacans
1 cup semi- sweet chocolate chips

Preheat the oven to 325 F
Melt butter in microwave

Beat eggs in medium bowl. Add flour and sugar. Once beaten, add melted butter and vanilla. Mix well until golden yellow. Add peacans, continue mixing and add chocolate chips. (if your butter is too hot, it will melt the chocolate. It won't harm your pie, but the chips will flavor the whole pie.)

Bake for 60 minutes

Variation: use peanutbuttet chips instead of peacans. It's like a peanutbuttet cup pie :D

Double Layered Pumpkin Cheesecake

Ingredients

2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1 (9 inch) prepared graham cracker crust
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1/2 cup frozen whipped topping, thawed'

Directions

Preheat oven to 325 degrees F (165 degrees C).

In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.

Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.

Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.




My family and I absolutely loved this recipe and continue to use it for functions. Rather easy as well and turns out delicious, especially if your a big pumpkin fan like myself.

I just started cooking and most of it is just what I think would taste good. I've made cheesy garlic bread, chicken/pepper/onion/potato skillet, chicken on a crisped tortilla shell with melted Mexican cheese on it with peppers and rice. The latest thing being roasted/toasted? (I use a toaster oven) garlic potatos.

So uh... yeah?

Seasoned Fries

What you need:
Frozen French fries
Salt
Black pepper
Garlic salt
Non-stick aluminum foil

Bake your frozen French fries as the instructions tell you to. Do this on the aluminum foil though. Make sure you use lots of foil, with plenty of hang over.

Half way through the baking time, take the fries out. Give them a dusting if salt, pepper and garlic salt. (Just guess at how much you'll want. I use equal portions of each season, in small quantities.)

Fold the foil up, making a small bag, and shake the seasoning into the fries. This will give you a better distribution of flavor.

Flatten the foil out again, and speed the fries out.

Continue baking fries for the second half of the time.

Variation: replace garlic salt with red pepper and a few shakes of Tabasco sauce. You may need to add 5-10 minutes of extra time to bake them. This will keep the fries from being damp or soggy from the Tabasco sause.
