You know what? I might fry some catfish tonight in our commercial deep fryer...That will go good by the fire, during the blizzard while watching football.. I have a secret recipe (please don't ask) coating I use...It's corn meal based. A little cayene pepper, salt, black pepper and a secret ingrediant. And there's a process to the breading that nobody knows..Not even my wife GO PANTHERS |

There's more to it than just the ingredients..You bring the 100% peanut oil up to a certain temperature, then after you drop the catfish you change it to another temperature..When you bite into the crunchy, crispy outer coating of my Special Recipe® Catfish™ grease exploads out all over the place, so you need a lot of napkins..That charicteristic is the result of my blanching process™. |

I make catfish and hushpuppies.... a guy in FL just ate the new state record for Blue Cat.... said it tasted the same as a non record cat.... O Tay... |
